  • 12 bone-in, skin-on chicken thighs
  • 10 cloves of garlic, crushed
  • 2 tablespoons dried oregano
  • 1 tablespoon fresh ground black pepper
  • 1 tablespoon kosher salt
  • A few shakes of cayenne pepper
  • 2 tablespoons caper brine (liquid from capers)
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 1 cup pitted green olives, halved
  • 1/2 cup chopped prunes (dried plums)
  • 1/2 cup capers
  • 1 cup white wine (or chicken broth with a splash of vinegar)
  • 2 tablespoons brown sugar
  • Chopped parsley for garnish


    1. Prep the chicken: Locate the thigh bone by flipping each thigh over and making two cuts perpendicular to the bone, about an inch and a half apart. This will allow the marinade to penetrate the chicken.
